Una de las estrategias para incrementar la sostenibilidad de los pequeños productores de ñame de la costa atlántica colombiana, es dar valor agregado a la producción del mismo por medio de la obtención de metabolitos secundarios. Teniendo en cuenta que los principales metabolitos secundarios presentes en los tubérculos del género Dioscorea son las saponinas esteroidales, se propuso evaluar el contenido de sapogeninas en variedades cultivadas de ñame provenientes de la costa Atlántica colombiana. Se seleccionaron con criterios agronómicos y quimiotaxonómicos 50 variedades de Dioscorea spp. (D. alata, D. rotundata, D. bulbifera y D trífida), se evaluaron y estandarizaron metodologías para la detección y cuantificación de sapogeninas en los tubérculos. Se encontró que las muestras de ñame contienen de 4 a 7 sapogeninas esteroidales diferentes, entre las cuales estan la diosgenina y/o yamogenina, sarsapogenina y/o esmilagenina y finalmente tigogenina y/o neotigogenina. De las especies estudiadas la más promisoria por su contenido de sapogeninas es la Dioscorea rotundata, con un promedio de 28.4 mg/100g de tubérculo en base seca y de las 50 muestras analizadas el 34% contienen diosgenina.
In order to improve sustainability of small yam producers in Atlantic Colombian coast, it has been proposed the extraction of secondary metabolites. If we consider that the main secondary metabolites in Dioscorea genus tuber are steroidal saponins, in the present work the sapogenin contents of some cultivated yam varieties from Atlantic colombian coast were evaluated. 50 Dioscorea spp. (D. alata, D.rotundata, D. bulbifera y D. trifida) varieties were selected by agronomic and chemotaxonomic criteria. The evaluation and standardization of methodologies were carried out for detection and quantification of sapogenins in the yams. The results showed that all yam specimens contain 4 to 7 different steroidal sapogenins, among them diosgenin y/o yamogenina, tigogenin y/o neotigogenina and sarsapogenin y/o esmilagenina. From the studied varieties Dioscorea rotundata exhibited the highest sapogenin content: 28.4 mg per 100g of dried weight and finally the 34% of specimens contained diosgenin.
