Standardising and validating aromatic profile analysis by an electronic nose

The electronic nose is one of the most innovative techniques which had been used in the analysis of food and other aroma matrices. This device imitates the human olfactory system through sensors which are partially specific for different groups of volatile chemicals and differentiating and classifying food (by involving multivariate statistics) and it is also used for establishing quality and control parameters. Although the technique has been increasingly applied in research and industry, few studies have been published in the scientific literature referring to validating its use as an analytical methodology. This work' s main objective was to standardise and validate the aromatic profile analysis method for differentiating apiculture products: honey, pollen and propolis. Standardisation involved modifying sample preparation and system variables while validation involved analysis of repeatability and intermediate repeatability of the method and establishing its uncertainty. The results showed that it was possible to set suitable operational parameters for each apicultural product while validation data showed that this technique did not reveal significant differences as reliable values were obtained when using this device as an analysis and quality control tool.
Una de las técnicas más novedosas en el análisis del aroma de alimentos y otras matrices es la nariz electrónica. Este dispositivo funciona como una imitación del sistema olfatorio humano por medio de sensores con sensibilidades solapadas para diferentes grupos de compuestos químicos volátiles que, mediante el uso de estadística multivariada, permite la diferenciación y clasificación de alimentos así como el establecimiento de parámetros de calidad y control de los procesos. Aunque la técnica cada día es más utilizada en la investigación y en la industria, son pocos los trabajos publicados en la literatura científica que hacen referencia a la validación de su uso como metodología analítica. El objetivo de este trabajo fue el de estandarizar y validar el método de análisis del perfil aromático por nariz electrónica para la diferenciación de productos apícolas: miel, polen y propóleo. La estandarización se logró modificando las condiciones de preparación de la muestra y las variables del sistema, mientras que la validación se realizó mediante el análisis de la repetibilidad, la repetibilidad intermedia del método y el cálculo de la incertidumbre. Los resultados obtenidos muestran que es posible determinar los parámetros adecuados de operación del instrumento para cada uno de los productos apícolas, mientras que los indicadores de validación mostraron que la técnica no presenta diferencias significativas en su respuesta, obteniéndose valores confiables para el uso de este equipo como una herramienta de análisis y control de calidad.
